ROASTED SALMON FILLETS WITH BASIL PESTO

INGREDIENTS:
  • 2 flat salmon fillet (7 oz each)
  • Saclà Pesto alla Genovese
  • 10 leaves of fresh rocket to garnish
  • 2 tbsp extra virgin olive oil
  • Lemon juice or a squeeze of fresh lime
METHOD:
  • Preheat the oven at 482°F.
  • Arrange the salmon fillets on an oiled baking pan and spread generously with Saclà Pesto alla Genovese, and squeeze lemon juice over the salmon fillets.
  • Roast 10 mins or until cooked but still moist.
  • Serve hot garnished with the fresh rocket leaves.
