ROASTED SALMON FILLETS WITH BASIL PESTO

INGREDIENTS:
- 2 flat salmon fillet (7 oz each)
- Saclà Pesto alla Genovese
- 10 leaves of fresh rocket to garnish
- 2 tbsp extra virgin olive oil
- Lemon juice or a squeeze of fresh lime
METHOD:
- Preheat the oven at 482°F.
- Arrange the salmon fillets on an oiled baking pan and spread generously with Saclà Pesto alla Genovese, and squeeze lemon juice over the salmon fillets.
- Roast 10 mins or until cooked but still moist.
- Serve hot garnished with the fresh rocket leaves.
