Baked Potatoes Stuffed with Smoked Scamorza, Bacon & Saclà Artichokes and Mushrooms

Ingredients

  • Medium potatoes 4
  • Smoked bacon, diced 1.8 oz
  • Smoked scamorza cheese 5.3 oz
  • Saclà artichokes 2 tbsp
  • Saclà mushrooms 2 tbsp
  • Olive oil
  • Salt
  • Black pepper
  • Dried oregano

METHOD

  • Wash the potatoes and boil them in salted water with the skin on for about 20–25 minutes, depending on their size
  • Drain and let cool slightly, then cut them in half lengthwiseù
  • Scoop out the flesh with a spoon, leaving the edges intact, and transfer it to a mixing bowl
  • Add the diced bacon and scamorza, the well-drained Saclà mushrooms and artichokes, then season with olive oil, salt, black pepper and oregano to taste
  • Mix well and fill the potato halves with the mixture
  • Arrange on a baking sheet lined with parchment paper, drizzle with a little olive oil and bake in a preheated 400°F oven for 20–25 minutes, until the cheese is melted
  • Serve immediately
