ROASTED SALMON FILLETS WITH BASIL PESTO

INGREDIENTS:
- 2 flat salmon fillet (200g each)
- Saclà Pesto alla Genovese
- 10 leaves of fresh rocket to garnish
- 2 spoons extra virgin olive oil
- lemon juice or a squeeze of fresh lime
METHOD:
- Preheat the oven at 250° C.
- Arrange the Salmon fillets on an oiled baking pan and spread generously the Saclà Squeezy a Little Basil Pesto and lemon juice over the salmon fillets.
- Roast per 10 mins or until cooked but still moist.
- Serve hot garnished with the fresh rocket leaves.
