BAKED POTATOES STUFFED WITH SMOKED SCAMORZA, BACON & SACLÀ ARTICHOKES AND MUSHROOMS

Ingredients
- Medium potatoes 4
- Smoked bacon, diced 1.8 oz
- Smoked scamorza cheese 5.3 oz
- Saclà artichokes 2 tbsp
- Saclà mushrooms 2 tbsp
- Olive oil
- Salt
- Black pepper
- Dried oregano
METHOD
- Wash the potatoes and boil them in salted water with the skin on for about 20–25 minutes, depending on their size
- Drain and let cool slightly, then cut them in half lengthwiseù
- Scoop out the flesh with a spoon, leaving the edges intact, and transfer it to a mixing bowl
- Add the diced bacon and scamorza, the well-drained Saclà mushrooms and artichokes, then season with olive oil, salt, black pepper and oregano to taste
- Mix well and fill the potato halves with the mixture
- Arrange on a baking sheet lined with parchment paper, drizzle with a little olive oil and bake in a preheated 400°F oven for 20–25 minutes, until the cheese is melted
- Serve immediately
